That looks good. That is the best I've seen at Rincon.

Not a sushi eater?
I found out later that there is some "fish" that may have been sushi in the middle of the skewer. I had to give up sushi after my transplants because of the risk of bacteria. But anyone who eats sushi knows that the raw fish is cut and assembled by hand and at a good sushi restaurant everything is very clean and hands are washed.
But as a practical matter -- did you ever wonder how your food comes out on a dish so niclely placed with the cherry and tomato here and there placed ever so nicely? Yes... by hand.
