But, if you mix it up, then you allow for the possibility that you will hit on all, or none, of those. This generates an extreme in results, which is more easily exploitable by some sort of a valid strategy.
Another problem with playing only the end spot at the table games, or the slots, is that you forgo the often profitable interactions with others. After all, who else do you have to work with in a casino? And, ultimately, it's a lot easier to profit by others than the casinos.
