Soundproofing the walls with acoustic panels or whatever they're called is not that destructive. Too thin windows is the problem, and that's more destructive and expensive to fix. So they probably won't bother.

I'm curious what kind of hideous casino carpet design her team is going to go with. Given that her restaurants are known for having a lot of trees and plants inside, I'm guessing a very busy foliage type design.
