Although a casino may prefer someone to not carry in their establishment it is definitely not against the law. Regardless of the casino posting a sign or not. Alcohol being served has no bearing on concealed carry other than the person carrying should not be consuming.
The only place a sign regarding concealed carry is relevant is on a public building. By all means the casino can ask you to leave. However, carrying concealed should give them no reason to do so. It is not illegal in the eyes of the law to open carry in a Nevada casino but most certainly you will be confronted if you do so.
